Jairo works closely with a small team of local pickers, focusing on selective hand-harvesting and careful processing, which creates more consistent work and fairer income throughout the season. By growing Castillo, a variety developed to resist disease and improve yields, the farm reduces the risk of crop loss and the need for chemical inputs; an important safeguard for small producers facing climate and market uncertainty. At the processing stage, water is reused and naturally filtered through vetiver grass beds, protecting local waterways and surrounding communities. This is a coffee rooted in quality, but just as importantly, it reflects a producer investing in resilience, sustainability, and the people who make the work possible.
